Wassup with New Beers? Wasabi!

I’ve heard of just about every imaginable ingredient making its way into beer from grilled beef hearts to whale vomit solids to actually tasting-sounding adjuncts like candy bars, exotic fruits, and fragrant herbs. Hell, there’s even a stunt beer in the news now about Broadside Brewing’s beer made with bear poop water. Yeah, beer poop water. Maybe I’d try it, but only to say you had it. But when I caught wind of a beer with a novel ingredient–wasabi, and specifically genuine wasabi rhizomes and not that horseradish paste you find at sushi spots–I had to learn more. Meet Matt Kat, head brewer for Redmond, OR’s Wild Ride Brewing, and how he turned Oregon Coast wasabi into a wasabi-ginger porter for their annual Portermania.
